We all know that seafood is an amazingly healthful part of a good diet. Study after study has pointed to diets high in fish as being great for brain health – from helping build healthy brains in infants and young children, to helping prevent the onset of Alzheimer’s.
So there’s lots of good reason to include fish regularly in my weekly menu – especially with two small kids, and a mama who lately can’t even seem to keep track of her coffee. (Gimme some of those Omega 3’s!) But the thing is – I don’t. I just keep leaving fish off the menu.
I’ve got the best of intentions when I’m shopping – grabbing fillets of wild-caught salmon when I see them on sale, and cans of super-low-mercury Safe Catch tuna whenever I find them affordably. But then…the fish sits in my freezer and the tuna slowly stacks up on my pantry shelf. I realized the other day that I have seriously lost my mojo when it comes to feeding us anything that comes out of the water. And if I wasn’t feeling inspired to make seafood meals, then clearly I needed to go looking for some inspiration!
